Eat– for Good Health
Spaghetti squash is a favorite food bulker. The rest of the family can have their high-carb pasta. For me, it’s a replacement for pasta because after it is cooked, it has a similar texture and consistency. One cup of this stuff has only about 40 calories, with 2 g of fiber. It’s great under any type of sauce– lasagna with zucchini, chili, low cal style tomato-basil-spinach and even soups. I have come to like its texture in salads that call for pasta, and give other family members the choice. For me, spaghetti squash completes a meal by adding another veggie for more nutrients and bulk with barely any additional calories. It really helps fill me up!
The squash is easy to use. You can either bake it in a 375-degree oven whole for an hour or pop it in the microwave for about 10-12 minutes (about 2 minutes a pound). Either way make sure you pierce the skin. Once it’s cooked, cut it in half, scoop out the seeds then, using a fork, scrap out the string like flesh.
Admittedly, this discovery has to do with being thinner. I feel rather hip eating it and don’t feel guilty when I’m full.

Kathleen, you and I have truly been brain washed at Weight Watchers, haven’t we! Spaghetti squash is truly versatile, and I love the bulk aspect. What I like most about my thinner appearance is my back. I don’t have that flabby back that I used to have to hide in loose tops. Now I can wear more trendy clothes.
Spaghetti squash has become a bit of a staple at my house, too. Like you do, Kathleen, I make pasta for my husband. Men just seem to have an easier time staying trim. I like being thin but don’t like to be hungry. I’m all for filling up with very little calories.

Linda, my cooking isn’t all that great. I just like to cheat mother nature. The goal is to shrink the waist while eating healthy. Finally I have the hang of it, and that makes me feel more energized and in control.
Kathleen, I’ve never made Spagetti Squash, but you make it sound yummy. I’ll have to try it out.
I’ve never tried spaghetti squash berfore. Maybe because it has the word squash in it. I’ve heard that it is really good. I guess I’m gonna have to try it.
