Isn’t it fun to shop for fruit and vegetables at Farm Stands?
My farm-stand tomato salad goes well with chipotle chicken and sweet corn. This colorful salad (160 calories per serving) serves six. Ingredients: 1/3 cup olive oil, 3 Tbsp. fresh lemon juice, 1 1/2 Tbsp. minced shallots, 1 tsp. Dijon mustard, 1/2 lb. cherry (quartered) tomatoes, 2/3 diced red onions, 1 Tbsp. drained capers, 1 head romaine lettuce with leaves separated, 1 can black olives, 1 hard-boiled egg (peeled and chopped). In a large bowl, whisk together olive oil, lemon juice, shallots and mustard until blended. Stir in tomatoes, red onions, and capters. Season with salt and pepper. On a platter, layer lettuce, tomato mixture, olives, and eggs.
