Eat– for Good Health

Meet the healthy guideline for milk at mealtimes in the form of yogurt, smoothies, or cheese, or in snacks such as low sugar pudding, lattes, or cappacchino.  Women need the equivalent of two cups of milk per day.  Low calorie MUSTARD DILL CHICKEN uses 1 Tbsp yogurt in the sauce, but if you have yogurt on hand for this recipe, you could make a smoothie as a snack.

Ingredients for 1 serving

1 Tbsp Dijon mustard

1 Tbsp plain fat-free yogurt

pinch of garlic powder

1 tsp dried dill

4 oz boneless, skinless chicken breast

Preheat oven to 350. In a small bowl, combine mustard, yogurt, garlic powder and dill.  Coat chicken with sauce.  Using aluminum foil, wrap chicken loosely and fold to seal.  Place on baking sheet and bake for 20 minutes.  Use an oven glove to carefully unwrap the foil, keeping your face away from the steam.  Broil chicken for 5 minutes until browned.  Serve with a green vegetable.
