Eat– for Good Health

Spinach and Tofu Pasta is delicious served with a piece of fruit and a mixed green salad.  Or, cut the fruit and add to the salad. If you are not allergic to whole wheat pasta, use it.  Some people are.

Ingredients for 1 serving:

1/4 cup Ricotta Cheese

1 tsp olive oil

1/4 clove garlic

1/2 cup frozen or fresh spinach

1/4 tsp. Italian seasoning

5 ounces firm tofu

Cook pasta according to box instructions.  Omit salt.  Microwave spinach if frozen and drain.   Slice garlic thinly.  Heat oil over low to medium heat in a nonstick skillet, saute’ garlic until just golden.  Cut tofu into cubes and brown. Add Ricotta cheese, spinach, and cook, stirring gently until warmed through.   Serve over cooked pasta.
