Eat– for Good Health

This version of the Southwestern Chicken salad is made with light cheddar cheese, a can of (drained, no sugar added) mandarin oranges, and slivered almonds instead of  chips.  And it tastes better.  To make a fabulous Southwest dressing, mix 1 Tbsp light mayonnaise, 1 Tbsp Mrs Dash Southwest Chipoltle Seasoning blend, and the juice of a lime.

Ingredients– for one serving

3 oz skinless grilled chicken breast

2 cups romaine or spring mix

1/3 cup canned black beans, drained

1/2 small red pepper, cut into strips

1/2 cup diced tomatoes

1 oz shredded low-fat cheddar

1 Tbsp sliced almonds

Cook chicken on the George Foreman or whatever method you prefer. Combine lettuce with all other ingredients and serve chicken on top.  Toss with dressing.  This is a filling 300 calorie salad.
