Eat– for Good Health

Mediterranean Flatbread Pizza takes only ten minutes to prepare, ten minutes in the oven, and is 200 calories per serving.  For extra crunch and protein, sprinkle with a handful of pine nuts before baking.   This tasty flatbread, topped with cherry tomatoes, low fat feta cheese, and olives will disappear in no time.  Serve with a green salad.

Ingredients to serve 6:

1 cup cherry tomatoes, quartered

1/2 cup crumbled, low-fat feta cheese (3 oz)

1/2 cup black olives, chopped

1 Tbsp olive oil

1 tsp dried or fresh oregano

1/4 tsp cracked black pepper

1 pkg naan flatbread, about 2 (8.8 oz)

Prepare oven to 400 degrees.  In bowl, stir all topping ingredients together.  Divide evenly and spoon onto flatbreads.  Bake until feta is soft and toppings and flatbreads are heated through, about 10 minutes.  Cut into wedges with a pizza cutter and serve.

    Thanks, Janessa! I like eye-appeal when it comes to food. Hey, I just learned that Mediterranean means middle on the earth. Of course it was and still is for many people.
