Eat– for Good Health

This low calorie Chicken Salad is flavorful, easy to make with prepared fat free or low fat mayo.  If you have left over frozen turkey, this is a nice substitute.  Enjoy with a cup of soup.   This is a busy time of year.  Take care of yourself and eat healthfully!

Ingredients for 4 servings, 90 calories per serving.

1 c. diced, cooked chicken
1/4 c. diced celery
1/4 c. diced green pepper
1/2 c. cooked green peas
2 stuffed olives, chopped fine
4 lettuce leaves
Salt & Pepper to taste
8 tbsp. low calorie mayonnaise
Place all ingredients, except lettuce, in a large bowl. Add mayonnaise and toss. Serve on lettuce leaves.
