Eat– for Good Health

Make this your healthiest holiday season ever by eating salads with  mono-unsaturated fats, greens, and fruit.  My 100-calorie (with one bread stick!) Arugula, Grape, and Sunflower Seed Salad is as good for you as it looks.  The simple vinaigrette has a flavorful combination of sweet, pungent, and tart that balances the seed crunch, arugula and crisp grapes.  The first five ingredients are for the dressing.   Ingredients to serve 6 below:

3 T. red wine vinegar

1 tsp. honey

1 tsp. maple syrup

1/2 tsp. stone ground mustard

2 tsp grapeseed or canola oil

7 cups loosely packed baby arugula

2 cups red grapes, halved

2 T. toasted sunflower seeds (although toasting is optional)

1 tsp. chopped fresh thyme

salt and pepper

Combine first four ingredients, adding oil gradually and whisking.  Combine arugula, grapes, seeds, and thyme in a bowl, drizzle with dressing, serve with salt and pepper shakers for individual’s taste.
