Eat– for Good Health

A meal of  Scallops with Lemon and Capers with broccolini is just 200 calories, so add a salad topped with chopped fruit and a sprinkle of almonds.

Ingredients to serve 4:

1 cup chicken broth

1 T. capers

1 1/2 tsp cornstarch

1 tsp. minced garlic

1 tsp. lemon zest

2 T. lemon juice

dash of salt and pepper

1 tsp butter and butter spray

1 1/2 lb sea scallops, patted dry

1 T. parsley

Scallops with Lemon & Capers

Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Drain immediately and immerse in a bowl of ice water. In a 2-cup measuring cup, stir broth, capers, cornstarch, garlic, zest, juice, and salt and pepper until constarch dissolves.  Melt butter in a large non stick skillet over medium-high heat.  Spray on butter spray. When butter begins to brown, add scallops and cook turning just once, about 5 minutes on each side.  Move to a plate.  Add broth mixture to skillet, bring to a boil to thicken.  Stir in parsley and broccolini.  Spoon over scallops.
