Eat– for Good Health

If you are looking for an uncomplicated, elegant dinner salad that is also low in calories, my Waldorf Chicken Salad is it!

KATHLEEN’S LOW CALORIE WALDORF CHICKEN SALAD—for 6 servings

1 lb. chopped cooked chicken breast, cut in cubes

3 c. chopped, unpeeled apples
1/2 c. chopped celery
1/2 c. seeded red grapes
1/2 c. chopped walnuts

Combine in a bowl. Mix lightly, cover and put in the refrigerator.

1/2 c. vanilla yogurt
2 tbsp. light salad dressing
1/4 tsp. nutmeg
1 envelope artificial sweetener

Blend well, chill covered. Spoon the fruit into a lettuce lined salad bowl.

Serve dressing on the side if you wish.
