Eat– for Good Health

Barbecued Skirt Steak with 1/2 cup for the Golden Girl of rice and peas, served with a tossed salad is 300 calories.  I am not going to be home over the dinner hour and need to make something that my husband can serve himself.  The BBQ skirt steak will be in the crock pot, his larger serving of rice and peas in a microwavable bowl with his salad on a salad plate in the fridge.

Ingredients to serve 4:

2 tsp. oil

1/2 cup low calorie BBQ sauce (find it with other sauces at the supermarket)

1 beef skirt steak, about 12 oz, cut crosswise into pieces

Heat oil in a large skillet over high heat.  Add steak and brown.  Place in a crock pot covered with BBQ sauce.  Forget all about it while you do whatever you are doing today.  Prepare rice according to package directions and add frozen peas during the last few minutes of cooking.  Serve with a tossed salad and light dressing.

    Reba, lately I’ve felt a little out of it regarding politics and government. I’m one of those people who struggle with who the Electoral College is. I know their number which is 3 for Washington D.C. and the number in the House and number in the Senate. I still don’t know how they’re picked and know they are not from the House and Senate. Anyway, stuff like that.

    I’m totally embarrassed, but I’m taking Political Science 101 which is government 101! The fun part is that I chose a controversial professor who says he could get fired at any moment because he brings up all the bad things that our government has done.

    Things such as the Waco, Texas Branch Davidian massacre by the ATF and misinformed FBI. Janet Reno was also misinformed and let it happen. Fifteen children under the age of two burned to death. Very sad for this odd group who were a part of the Seventh Day Adventists, but they were not criminals. We do have freedom religion in this country.

    Yes, and this was the strange part of their end-of-the-world belief system. Koresh had their parents’ permission because everyone in the branch believed the offspring would be new religious leaders. All was strange, admittedly, but they should not have been gunned down.

    Kathleen, I watched a documentary where helicopters machine gunned down a seventeen-year-old boy who was just looking out a tower. In another incident, the Davidians buried someone (can’t remember who it was) and tanks later ran back and forth over his grave.

    Correct. At night loud music was played by the ATF of a hostile nature, “These Boots Are Made for Walking” and recorded screams of rabbits being massacred over loudspeakers. Bright lights were shown on the complex. All this was supposed to agitate them. There were many lies and cover-ups going on.

    Friends, I apologize for bringing up this unhappy event. I want Petals in the Gazebo to be an optimistic gathering place.
