Barbecued Skirt Steak with 1/2 cup for the Golden Girl of rice and peas, served with a tossed salad is 300 calories. I am not going to be home over the dinner hour and need to make something that my husband can serve himself. The BBQ skirt steak will be in the crock pot, his larger serving of rice and peas in a microwavable bowl with his salad on a salad plate in the fridge.
Ingredients to serve 4:
2 tsp. oil
1/2 cup low calorie BBQ sauce (find it with other sauces at the supermarket)
1 beef skirt steak, about 12 oz, cut crosswise into pieces
Heat oil in a large skillet over high heat. Add steak and brown. Place in a crock pot covered with BBQ sauce. Forget all about it while you do whatever you are doing today. Prepare rice according to package directions and add frozen peas during the last few minutes of cooking. Serve with a tossed salad and light dressing.
