Eat– for Good Health

Yesterday a dear friend who had undergone extensive plastic surgery came to lunch with her husband.  Hubby likes meat loaf, and my friend wants to lose about ten pounds.  Since her surgery two weeks ago, which included lipo around her waist and back, she tells me she has gained weight.  So I made this low cal Meat Loaf Pizza Style, serving it with a tossed salad and homemade bread sticks (for those who want them).  Not I, darlings, since the meat loaf and salad are 300 calories.   I baked the mixture in two aluminum loaf pans, freezing one.

Ingredients for 8 servings:
1 cup white bread crumbs
1 cup skim milk
2 pounds ground chicken breast, skinless
Two egg whites, whipped
1/2 cup each– mushrooms and onions, chopped
1/2 cup bell peppers, chopped
1/2 cup each low cal mozzarella and Parmesan cheese, grated
1 teaspoon salt
1 teaspoon oregano
1 teaspoon pizza seasoning
1/4 teaspoon black pepper
1 cup pizza sauce

Soak top and bottom of a clay pot in water for at least 15 minutes. In a mixing bowl, combine bread crumbs, milk, chicken, egg whites, onions, bell peppers, Parmesan cheese, salt, oregano, pizza seasoning, and black pepper. Press in pot.

Cover and place in cold oven. Set temperature to 400-degrees. Bake for one hour.

Spread sauce on top. Then, top with mozzerella cheese and mushrooms. Cover, return to oven and bake ten minutes more.

    Mary Alice, sometime in late fall, my friend had a complete face lift. Actually she had more than complete because her surgeon did some sort of fat spinning technique for puffing up her lips. Anyway, two weeks ago she underwent a nose job, breast enlargement, and liposuction.

    Rachel, she said around fifty thousand, but she and her husband don’t have children and they have money to burn. Well, not burn exactly. Everything turned out very nice except that her lips do not look quite right. Maybe it’s that her lips don’t look the same.

    Women like fuller lips these days. Sometimes with Botox and that other permanent technique, lips lose their natural contour. How did the lipo work out?

    I don’t know what it is about women who get breast implants, but they always want to show everyone.

    Mary Alice, that is what happened when they were about to leave. She asked me if we wanted to see them. My daughter Janice was there and of course her husband. My friend didn’t wait for a reply–just threw off her t-shirt and bra, a kind of sports bra is what post-op patients wear for awhile.

    I said, “Chiquita, they’re big.” Her husband said he liked that nickname and was going to call her that from now on. Chiquita liked it, too.

    Chiquita is looming pretty large, though. Glad to have what I have. As a swimmer, I wouldn’t want extra drag. My Bs are just fine.
