Eat– for Good Health

If you are in the mood for pizza tonight, try this White Bean, Sun-dried Tomato, and Spinach Pizza.  Preheat oven to 425 degrees.  Boil 2 cups of water over 1/2 cup sun-dried tomato halves (not oil-packed) and let stand ten minutes.  Drain.  Cut into strips and set aside.  In a food processor, place one 15-16 ounce can of Great Northern or navy beans (drained and rinsed) and a clove of garlic (if desired) and chop.  Process until smooth.  Place a 14-oz package of pre-baked Italian pizza crust (12 “) on an ungreased baking sheet.  Or, as a crust use 2 large whole wheat pitas. Spread beans over crust, sprinkle with tomatoes and 1/4 tsp dried oregano.   Add 1 cup shredded spinach leaves and spread 1/2 cup low calorie shredded Colby-Monterrey Jack cheese blend.  Bake ten minutes or until cheese is melted.   One of the eight slices is 240 calories.
