Eat– for Good Health

Tofu with stir fried vegetables is delicious, low calorie, and filling.

Ingredients for 4 servings:

Cooking spray

1 tsp sesame oil

1 lb extra firm tofu, cut into cubes

4 scallions, sliced

1 green and 1 red pepper, diced

2 carrots, sliced

1 cup mushrooms, sliced

2 T. low sodium soy sauce or Hoisin sauce

2 cups cooked brown rice

Coat a large skillet or wok with cooking spray.  Add oil and tofu until brown on both sides, about 2 minutes.  Add vegetables and stir fry.  Add soy or Hoisin sauce.  Serve over rice.
