Eat– for Good Health

Thinking about having friends or family over this week end?  My 6-serving, low calorie recipe for Beef Burgundy can be prepared in the crock pot.

2 slices bacon — chopped and used for garnish by guests, individually
2 pounds sirloin tip or round steak — cut in 1 inch cubes
1/4 cup flour
1 teaspoon salt
1/2 teaspoon seasoned salt
1/4 teaspoon marjoram
1/4 teaspoon thyme
1/4 cup fresh chopped parsley
1 clove garlic — minced
1 cube beef bouillon — crushed
1 cup Burgundy wine
2 tablespoons cornstarch

In large skillet cook bacon several minutes. Remove bacon and set aside in its own bowl. Avoid the bacon if you are on the Gold Standard of Thin program.  Coat beef with flour and brown on all sides in the (very scant!) amount of bacon drippings. Combine steak, bacon drippings, cooked bacon, seasonings, parsley, bouillon and Burgundy in crock pot. Cover and cook on low for 6 to 8 hours or until meat is tender. Turn control to high. Add cornstarch (dissolved in 2 tablespoons water); cook on high 15 minutes.  For variety serve over cooked brown or wild rice and add steamed green beans and a fruity summer salad.

  1. Friends, I learned the hard way that I have more time to enjoy life when I don’t cook two dinners– one low calorie and one more man friendly. What I do is make all favorites low calorie and use portion control so that I never exceed 350 calories per meal. And, if I do that, I don’t have an evening snack.
