Eat–for Good Health

Have you heard the term “New American”?  It describes healthy menus, and the combination that stands out is salad with lean protein and fruit.  A prime example is the Turkey-Spinach Salad.  This is a quick fixing dinner.  Dressings such as my honey-sesame (recipe below) is based on chicken broth.  Top with cashews and any type of berries, but I like kiwi and strawberries which are in season.

Turkey Spinach Salad 

1 lb. cooked turkey breast, thickly sliced and then sliced into long strips

6 cups baby spinach

1 cup fresh strawberries

2 kiwis, peeled and cut crosswise

1/4 cup very thinly sliced red onion

1/2 cup dry cashews

Dressing:  1/2 cup reduced chicken broth, 2 T. honey, 2 tsp. honey mustard, salt and pepper to taste.

  1. Friends, Nix white empty carbs– and limit whole grains. Vegetables and fruits are superior carb options for vitamins in whole grains. Butter and cheese are high in saturated fat and calories. Red meat (fatty types such as beef, lamb, bacon) move slowly through our systems, causing bloat. Have them in scant amounts for flavor.
