Eat– for Good Health

Celebrate Labor Day without gaining weight! Confetti Broccoli Slaw is under 100 calories per serving, and it goes well with anything at a barbeque.   I’ve updated coleslaw with broccoli, carrots, and a sweet orange dressing.  If you want to, consider adding chopped pecans and orange-flavored cranberries to maximize crunch and flavor.

Ingredients to serve 12:

1/4 cup oil

1/2 cup apple cider vinegar

3 T. orange juice

3/4 tsp. sugar

Dash of salt and pepper or Mrs. Dash’s seasonings

5 cups broccoli slaw from two 12-oz packages

3 cups shredded carrots

1/3 cup thinly sliced red onion

If desired, 3 T. chopped pecans and 3/4 cup sweetened dried cranberries

In a large bowl, whisk together oil, vinegar, orange juice, and seasonings.  Add other ingredients and toss.  Cover and refrigerate at least one hour.  If desired, just before serving, sprinkle with cranberries and pecans.

    This is something I can bring to our condo-roof party! Other people are bringing cupcakes, heavy bbq meat, corn on the cob, chips and dips, and who knows what else. . .

    Believe me, other people will appreciate it. I still lie or fake not drinking– I bring diet coke and a small bottle of rum (and you won’t kill plants if you water them with it). Anyway, there are always people who try to get everybody drinking. I just enjoy my diet coke.
