Eat– for Good Health

Try more slimming comfort food, my loaded Nachos with Turkey, Black Beans, and Salsa.  Loaded doesn’t have to mean loaded with calories.  Not when you substitute turkey, beans (or if you desire, seasoned fat-free refried beans) and non-fat yogurt for the usual heavier ingredients.  nachos.jpg

Ingredients for 4 servings, 340 calories each:

4 oz. baked tortilla chips such as Baked Tostitos Scoops

8 oz. ground turkey breast

3/4 cup spicy refried beans, a can of spicy beans, or black bean dip

Dash of salt and pepper, if desired

1 cup reduced-fat Mexican-styele four-cheese blend

1 cup storebought fresh salsa

2/3 cup nonfat yogurt (Greek is good)

2/3 cup fresh cilantro leaves

Preheat oven to 425 degrees.  Line a baking sheet with foil.  Spread tortilla chips out on the baking sheet or use an aluminum pan and leave on counter.  Heat a large nonstick pan over high heat, and cook turkey until cooked through and browned.  Season with salt and pepper, stir bean dip into turkey.   Pour this mixture over chips, sprinkle with cheese, and bake in oven for 6 minutes until cheese is melted.  Remove baking sheet from oven and top with salsa.  Drop small spoonfuls of yogurt on top and scatter cilantro over it.  Serve immediately while hot.
