Eat– for Good Health

My recipe for the time-honored BEEF STEW WITH POTATO DUMPLINGS is 320 calories, takes ten minutes to prepare, but cooks five hours in the crock pot.

Ingredients serve 6:  1 lb chuck steak, trimmed and cut into 1-inch pieces, 3 T. flour, 3 medium carrots cut into coins, 1 pkg mushrooms cleaned and quartered, 1 pkg frozen pearl onions 1 1/2 cup low sodium beef broth, 3/4 cup dry red wine, 3/4 tsp. dried thyme, 1 pkg (17.5 oz) gnocchi.  Directions:  In a large bowl toss together steak, flour, and salt/pepper.  Place steak in slow cooker with carrots, mushrooms, onions, broth, red wine, and thyme.  Cover and Cook for “a long time.”  30 minutes before serving, add gnocchi.  Cook until gnocchi is tender.
