Eat– for Good Health

Don’t you love the taste of Southern side dishes that are often made with brown sugar and pecans? Here are a couple of items that help us shed pounds during the high calorie holidays, from Halloween through the New Year when the average person gains seven pounds.  The first is butter spray but use as intended (not the entire bottle, ha ha) and the second is sugar substitutes.  In the recipe below for Broccoli with Pecan Brown Butter Picture of Broccoli with Pecan Brown Butter Recipe ,  I opted for Sugar Twin Brown Sugar which can be used in cooking and baking. Sugar Twin Brown Sugar Replacement   Cut the calories in half!

Ingredients for 10 at 75 delicious calories per serving: 2 lbs. broccoli florets, butter spray, 2/3 chopped pecans, 2 chopped shallots, 2 cloves minced garlic, Mrs Dash in place of salt and pepper, 1/2 tsp. crushed red pepper flakes if desired, 1 T. lemon juice, and lemon slices.  Directions:  in a large pot of boiling water, cook broccoli until tender and bright green, about 3 to 4 minutes.  Drain.  In a large butter-sprayed skillet, add pecans, shallots and garlic.  Stir until garlic becomes tender and add seasonings and broccoli.  Using tongs, toss broccoli until heated through, about 5 minutes.  Transfer to serving bowl and squeeze with lemon, the famous butter imitator. Garnish with lemon slices.

  1. Our bodies require some fat, and although olive oil contains 120 calories per tablespoon, it’s worth it in salad dressings. The beneficial health effects of olive oil are due to both its high content of monounsaturated fatty acids and its high content of antioxidative substances. Studies have shown that olive oil offers protection against heart disease by controlling LDL (“bad”) cholesterol levels while raising HDL (the “good” cholesterol) levels.
