Eat– for Good Health

This delightful crunch salad is called raita (RI-tah) and is found on the menu of many Indian restaurants and is refreshing with any fiery food.  Try it with chili.  My Indian Cucumber-Yogurt Salad just takes ten minutes to prepare.

Ingredients serve 4:

1/2 cup plain fat-free yogurt

2 T. chopped fresh mint

3/4 tsp. ground cumin

1/2 tsp. salt or Mrs. Dash (sodium free)

1/8 tsp. cayenne

1 cucumber, quarted lengthwise and sliced

Combine the yogurt, mint, cumin, salt or Mrs. Dash, coriander, and cayenne in a medium bowl.  Add the cucumber and mix.  Serve at oce or refrigerate for the next day.

    Kathleen, I was excited about the Dukan pancake from your blog yesterday. I had a heck of a time finding oat bran. I thought it would work with very very fine oatmeal. I made it, and it wasn’t pretty. Even on medium heat, it just wouldn’t cook through. My pancake was a blob but it tasted pretty good. Anyway, I would say oat bran is an exotic ingredient.

    One thing for sure, Melinda– oat bran lowers bad cholesterol levels by 26%. It stablizes blood sugar, reducing type 2 diabetes, and it helps digestion by reducing constipation because of the high fiber. Your disgusting blob was good for you, ha ha.

    Those of you who blog here with us know that Mary Alice and I both enjoy old fashioned oat meal every morning. We also swim laps every day. We want to outlive our (younger-than-us) husbands.

    Kathleen, I wouldn’t say outlive. I would say live as long as them. Men don’t do well when left alone. Women don’t either, but we are more sociable.

    Mary Alice, when my husband (9 and a half years younger than me) proposed he said something like “don’t leave me alone, promise?” That was after we discussed our age different. Well, I won’t!!

    Just think, when your husbands were twelve year old paper boys, you were seniors in college! But, to see you as couples now, I wouldn’t say anyone would guess the ages between man and woman.
