Eat– for Good Health

In a couple of hours  my husband, our daughter Janice, and I will head to Newport Harbor and sail the day away.  I will pack a picnic lunch. Tuna Salad has crunch and can be put in a sandwich, and I’ll bring water bottles and in season peaches.

Tuna Salad a la Rowland

  • 1/2 large celery stalk
  • 2 fresh radishes (medium)
  • 2 cups mixed salad greens
  • 6 cherry tomatoes
  • 3 oz. tuna fish water-packed, low sodium
  • 2 tsp. balsamic vinegar
  • 2/3 tbsp. olive oil


Rinse and chop celery, radishes and salad greens; quarter cherry tomatoes. Drain and and flake tuna. In medium bowl, mix tuna with vegetables, toss with oil and vinegar.  If you like, place tuna salad between two whole wheat slices.
