Eat– for Good Health

There are many recipes for veggie burgers, and if you’ve ever tasted the one at The Counter, my recipe is a copycat.  Really good!  Photo below is courtesy of W.K. Ate.  Because potatoes absorb the flavors added to them, this awesome vegan recipe has a satisfying texture.  Serve with a slice of tomato, lettuce, Thousand Island dressing (fat free), on a thin whole wheat bun.

Ingredients:

  • 1 cup canned black beans
  • 1 carrot, grated
  • 1/2 onion, diced
  • 3 potatoes, grated
  • 4 scallions, chopped
  • 1 cup corn
  • salt and pepper to taste
  • oil for frying

Preparation:

Mash the beans with a fork or a potato masher. Add the remaining ingredients, except the oil and mix until well combined.Shape the mixture into patties. Heat about two tablespoons of olive oil and cook each patty until the done on both sides.  My husband Gerry loves these, and your guy will too.
