Grilled Fish with Peach and Pepper Salsa

Grilled Halibut with Peach and Pepper Salsa Recipe
I make my own salsa– green olives, nectarines and peaches (pitted, chopped) with chopped fresh parsley, red onion, olive oil. First, sauté the fish and then add the above combo.  When I find Dover Sole, I feel lucky and want to do something special with it.  I’ll serve this with brown rice, green beans, and a tossed salad.

    Kathleen, I like how you jazz up fish. Very eye appealing with stone fruit salsa! I love eating healthy. It makes me feel good about myself.

    Yeah, and when we feel good about ourselves, others feel positive about us too. Kathleen, did you go to the Orange Old Towne Market with Sonie today? I ran into her on a walk, and she said you two were going– the weather is so hot for walking around outside.

    Hi Mary Alice and Reba– yes, we went and had fun in spite of the heat. There were lots of ethnic food tents and crafts. I bought a Greek beef souvlaki which was delicious with lemon, yogurt, and fresh tomato. Sonie is a strong person who tries to stay positive. She’s trying to eat healthier, but she has much stress as she cares for her two severely autistic sons. They don’t have speech and do have a lot of aggressive feelings.

    I know, Kathleen. Her arms are always black and blue. They’re tall and strong. Sometimes I see large bite marks.

    Sonie works hard to make their lives as normal as possible. Personally I don’t think I could do it day to day like she does. Her husband is amazing too.

    No one in life gets exactly what they thought they were going to get. But if you work hard at things and you’re kind, life works out. At least Sonie and Jim have each other for support. Sonie needs encouragement. I notice that she likes to talk mostly about her life “before the boys”. Their autism is as severe as it can get– most people haven’t been in contact with their extreme condition.
