Chicken Chow Mein can be low calorie fare and easy to prepare with a purchased show mein seasoning mix to get that authentic Asian taste. I like to add many vegetables with the chicken and top with crunchy chow mein noodles.
Ingredients
- Chow mein crunchy noodles
- 2 tbsp sesame oil
- 1 med onion
- 2 cloves of garlic, pressed (or leave out if you don’t like garlic)
- 2 cups bean sprouts
- extra vegetables: bok choy, carrot, celery, spinach, cabbage
- 1 chicken breast, baked previously, and sliced
- A pkg of chow mein seasoning mix (such as Sun-Bird) with 3 tbsp soy sauce, 3/4 cup water

Hi Nina. I’m guessing you know the downside of sugar already. For those who need a refresher, the sugary snacks in a vending machine creates GLYCATION, a process in which glucose (sugar) binds to tissue in our bodies and produces substances that turn the collagen and elastin in our skin stiff and brittle. This leads to wrinkles and sagging. Eating sugar also produces more free radicals.
Sure does! My research (UCLA) backs it up. My advice is to swap processed, refined foods for whole grains, fruits, and veggies. Kathleen, your recipe here uses an intelligent cooking style. The chicken is pre-baked, and the stir fried vegetables in sesame oil (scant amount) makes them flavorful.

That’s true, Reba. Italian-American friends don’t care for whole wheat pasta for instance. They don’t need to pile their plate with it. A cup of pasta is enough.
Sugar really is bad! I want to age gracefully– I wear sunscreen, don’t smoke, but now I’m going to watch out for sugar.
Hi Dash, Reba, and Annika– I don’t think we need to eliminate sugar entirely. A sprinkle here and there won’t do a lot of damage, but we are what we eat. Skip the greasy, sugary foods in favor of low-fat, low-cal main dishes, soups, and salads.

Does anyone remember the cartoon character, Little Lotta? Her parents kept a paddle lock on the refrigerator. I read in a magazine that for $45 you can buy a kitchen safe. You can take out a handful (of say, jellybeans). You shut the door and can’t open it until the same time the next day.
Yeah, Reba, I know where you can buy these safes– givesimple.com but my guess is that humans can outsmart the kitchen safe by dumping the contents. That’s what our sons Max and Jake would do, ha ha.
