Eat– for Good Health

Today we’re having Parmesan Baked Salmon.  For my husband who eats more than me, I’m also serving mashed potatoes with the skins left on.

Parmesan Baked Salmon recipe

Ingredients for 4 servings

1/4 cup low calorie mayonnaise
2 Tbsp.  Grated Parmesan Cheese
1/8 tsp.  ground red pepper (cayenne)
4 salmon fillets (1 lb.), skins removed
2 tsp.  lemon juice
1/2 cup of Ritz or other crushed crackers

Directions

HEAT oven to 400°F.

MIX mayo, cheese and pepper until well blended.

PLACE fish in shallow foil-lined pan; drizzle with lemon juice. Cover with mayo mixture and cracker crumbs.

BAKE 12 to 15 min. or until fish flakes easily with fork.

    This recipe will work out great for us, Kathleen. I can never figure out what to cook. It’s raining, and maybe the lack of sunshine is brain endangerment.

    Rob is a handsome hunk who is the stay-at-home dad while Mary Alice brings home the bacon. Mary Alice, you and Rob are a great team and terrific parents to your sons, Jake and Max. A few years ago, I recall you adopted these former foster care boys.

    We are soooo lucky to have Max and Jake. It was not their fault they were without a permanent home. When their mother was sentenced to jail and knew she wouldn’t be out for at least five years, she allowed them to be adopted. They are super good kids.
