Fresh veggies roasted with garlic and olive oil get a Mediterranean flair thanks to a fresh basil and balsamic vinaigrette! Ingredients: onion, eggplant, red pepper seeded, zucchini, cloves of garlic, olive oil and dressing made fresh with olive oil, balsamic vinegar and fresh basil leaves.
Preheat oven to 400 degrees. Cut up veggies and place in a roasting pan. Sprinkle pressed garlic over the top, pour 2 tablespoons olive oil on and under vegetables. Roast 40 minutes. Make dressing. Arrange vegetables on a platter and sprinkle with parmesan cheese. Yummy!
