Eat– for Good Health

Fresh veggies roasted with garlic and olive oil get a Mediterranean flair thanks to a fresh basil and balsamic vinaigrette!  Ingredients: onion, eggplant, red pepper seeded, zucchini, cloves of garlic, olive oil and dressing made fresh with olive oil, balsamic vinegar and fresh basil leaves. 

Preheat oven to 400 degrees.  Cut up veggies and place in a roasting pan.  Sprinkle pressed garlic over the top, pour 2 tablespoons olive oil on and under vegetables.  Roast 40 minutes.  Make dressing.  Arrange vegetables on a platter and sprinkle with parmesan cheese.  Yummy!

    I’m making your grilled veggies this week end. It’s wonderful having low cal items along with a backyard barbecue which tends to be meaty and heavier.

    Here’s something fun I learned recently– white veggies (onions for instance) prevent strokes. This was in a ten year Dutch study.

  3. Hi Mary Alice, Janessa, Dash, and Jill– pretty cool, we can eat healthy and lengthen our lives. Jill, I read the Dutch study you mentioned. Folks with the highest intake of white vegetables– chock-full of clot-stopping flavonoids– had a 52% lower risk!
