Eat– for Good Health

Do you enjoy summertime Pea Soup with Mint?  Green peas are an excellent source of resistant starch. This fiber-like nutrient increases fat-burning by 20 to 25%.  Also reported in dual studies from Iowa State University is that cholesterol is lowered by 20 points.

Ingredients serve 4:

Cooking spray, 1/2 Tbsp butter, 1 cup


3 spray(s) cooking spray   

Dab of Butter

1 cup uncooked leaks, white parts only, finely chopped

Large container of chicken broth

5 cups uncooked green peas, frozen or fresh shelled

1/3 cup fresh mint leaves

Salt and pepper or Mrs Dash seasonings

1/2 cup buttermilk

Directions:  Cook leaks until transparent, and then add all other ingredients.  Cook until done and add mint leaves as a garnish.

    The study from ISU researcher James Hollis, PhD, revealed the appetite controlling aspects of soup. Vitamin and mineral levels rise (evidenced by blood tests) and so do anti-hunger and get-slim hormones!

As a matter of fact the ISU researcher, Dr. James Hollis, wrote– Mediterranean dieters who eat the most Greek yogurt lose 12 more pounds than those who don’t due to extra doses of fat-fighting calcium and protein. Every morning after swimming laps I have 1/2 cup cooked oatmeal, cinnamon, and yogurt. I admit to putting a packet of sweetener on top.
