Pesto Cod and Veggie Parcels is a British recipe. Serve couscous on the side if desired.
You can’t get much healthier than this!
PREP 10 MINS COOK 20 MINS
2 beef tomatoes, sliced
1 garlic clove, crushed
small bunch of basil
2 courgettes, or zucchini to us, cut into matchsticks
4 chunky cod steaks
8 tsp fresh pesto
1 After cutting cod into 4 pieces, fry in pan with a scant of olive oil. Turn to other side. Cook through.
2 Put a slice of tomato on top of each, season and top with garlic, basil and courgettes (zucchini)
3 Arrange cod steaks on vegetables and spread over pesto. Seal and bake for 20 mins until fish and vegetables tender.
